Aunt Pat's Crustless Ham and Spinach Quiche Recipe
Ingredients:
1 1/2 Tsp Olive Oil
1 C chopped ham (I used deli sliced ham)
1/2 pkg frozen spinach, thawed and drained
1/2 C diced onion
1 1/2 C shredded Monterey Jack Cheese (I have used different kinds of cheese).
1 C milk
2 large eggs (I used 3 small)
1/2 C Bisquick
Salt
Procedure:
1. Set oven at 400 DEGREES.
2. Heat oil in skillet at med heat. Add ham and sauté till slightly brown. Remove.
3. Add spinach and onion to the skillet and cook till onion is tender. Mix with ham.
4. Layer half of the spinach/ham mixture to a sprayed pie plate and top with half of the cheese. Repeat once.
5. Whisk eggs, milk and Bisquick till smooth. Pour over the ham/spinach dish.
6. Bake for 25 to 35 minutes until a knife inserted in the center comes out clean. Let stand for at least 10 minutes. Serves 6 to 8.
Arch and I love it. It really is better the second day.
